Summer truffles (Tuber aestivum, or lo scorzone) are known for their delicate aroma, due to the shorter period of maturation compared to the prized black winter variety. Harvested from May to November, summer truffles are lighter in color, and more subtle in flavor than the more widely known winter truffles. Trained truffle hunters know to find this variety in limestone-rich terrains near oak, pine, and hazelnut trees.
Thanks to their light and delicate flavor, summer truffles are best enjoyed when combined with Urbani Unico Extra Virgin Olive Oil with Black Truffle and incorporated into sauces for pasta or shaved on top of bruschetta for a light antipasto.
