This easy recipe has only one ingredient: Montasio cheese.
The fresh, semi-aged, and aged varieties will all work. The discs will be flexible when warm but crisp up as they cool. If you'd like to get fancy, you can shape them into little tubes, cups, or baskets when they are warm, and they will retain the shape. INGREDIENTS
1 cup grated Montasio cheese
STEPS
Heat a nonstick griddle or cast-iron pan (or coat another pan very light with olive oil) and sprinkle about 1 tablespoon grated Montasio in a thin circle.
Cook until crisp and golden, then flip and cook the other side, about 5 minutes total. Repeat with remaining cheese.
