Named after it's main component finocchio, or fennel, Finocchiona is a Tuscan-style pork salami made with fennel, garlic, and black pepper. Finocchiona originated in Florence during the Reinassance when, instead of the overly-expensive black pepper, butchers would use fennel that grew wild in the Tuscan countryside.

Based in Chicago, Tempesta Artisan Salumi is a small and artisanal charcuterie company. Antonio Fiasche founded the company a few years ago with the goal of keeping and sharing the Fiasche family tradition of making Calabrian 'nduja spread and salumi. Tempesta Salumi are made with heritage-breed animals that are raised humanely, fed a vegetarian diet, and without the use of antibiotics. Tempesta products do not contain synthetically produced nitrates or nitrites, but only those which are naturally occurring in sea salt.
