The Biscotti di Prato are almond cookies, still baked in the same laboratory and 13th-century family building where Antonio Mattei first created them. Each batch is packed in its signature blue bag, which is closed and hand-tied individually.

In 1858, Antonio Mattei baked his first Biscotti di Prato, which would soon become a staple of the Italian biscotti, or cookies, tradition. For more than a century and a half, the Biscottificio (cookies factory) has been run by the Mattei family, gaining national and international fame, and solidifying as one of the landmarks of the city of Prato, in Tuscany.
