Strozzapreti pasta or ‘priest stranglers’, from Pastificio Pisani are an elongated form of cavatelli typical of central and southern Italy, still made today by either hand-rolling or twisting the dough with a wire and then drying them. The Strozzapreti from Pastificio Pisani are exclusively made with Italian durum wheat grown in Pisani's own fields in Corigliano Calabro in the Calabria region.

Pastificio Pisani was founded by two brothers, Cosimo and Aldo Pisani, whose family has been producing durum wheat for several generations in their farm in Corigliano Calabro, Calabria region. In 2002 Cosimo and Aldo Pisani decided to start a new business called Pisani & Pasta where they make authentic regional pasta using their own durum wheat semolina.
