BLOOMING FOR THE SEASON

After a long New York winter, the city can finally rejoice in warmer weather, longer days, and of course, the spring refresh of SERRA. SERRA by Birreria has bloomed into its iconic rooftop oasis featuring rustic dishes, vibrant handcrafted cocktails, an immersive floral look, and more. Meaning “greenhouse” in Italian, SERRA always changes with the seasons, offering a unique dining experience reflective of the Italian countryside

Every March, the culinary team at SERRA patiently waits for the first sunny day when they can stroll over to the Union Square Greenmarket, chat with the producers, and find the first signs of artichoke and spring pea. This season at SERRA, feast on Scarola alla Griglia, grilled seasonal Norwich Meadow Farms chicories topped with Extra Virgin Olive Oil, shaved Parmigiano Reggiano DOP 18-month aged and Villa Manodori Aceto Balsamico. Try traditional Bombette, Fingerlake Farm Pork Shoulder stuffed with Caciocavallo and Mortadella Rovagnati, then skewered and served from a torched wooden log. And celebrate spring with the Carciofo, a seasonal poached, fresh artichoke lightly seared and topped with housemade gremolata, a spread of pistachios, herbs, lemon zest and Extra Virgin Olive Oil.

This season the pastry chefs at SERRA are bringing in a sweet, Italian countryside tradition: crostate. A dessert typically made in the springtime by nonniall across the peninsula, crostate are composed of a perfectly flakey crust and a simple, seasonal filling. SERRA will feature Cioccolato e Caffè (Chocolate and Coffee), Mandorle e Amarena (Almond and Cherry), and Mela e Albicocca (Apple and Apricot Jam) flavors of crostate that will be displayed front and center in the dining room for everyone to swoon over all meal long

'CELLO SPRING

This season the beverage experts at SERRA have taken inspiration from limoncello and the Italian tradition of infusing spirits with local flavors to make their own set of springtime veggie-cellos. You can sip the Carota using fresh carrots, the Piselli made by infusing bright spring peas, and the Rabarbaro showcasing the sweet and bitter notes of peak season rhubarb, on their own or in a cocktail.

Also on the menu, the SERRA experts have created a list of retro drinks inspired by the 80’s era, but featuring Italian touches. Choose from drinks like the Cosmopolita (Cosmopolitan) using Vulcanica Vodka from the Sicilian coast and housemade cranberry and pomegranate syrup, Cavalletta (Grasshopper) made using Amaro Grinta and fresh mint, and even a Tequila all’Alba (Tequila Sunrise) made with Luxardo Maraschino and finished tableside with a splash of La Gioiosa Fragolino. There’s no denying that New Yorkers love a classic comeback!

PLANTING THE FUTURE

This season we will also be collaborating with our long-time local partner, Invincible Summer Farms, to bring awareness and to support their new initiative: The Endling Project. This farm in Long Island is on a mission to protect plant species from extinction by utilizing a network of green-thumbed volunteers to grow and nurture endangered seeds. This spring, The Endling Project will provide Eataly staff volunteers with seeds, information, and resources needed to grow the seeds into their very own plants at home.
