WHAT IS PIZZA ALLA PALA?

Authentic, Roman-style pizza by the slice, made with fresh ingredients; available every day

Made with a dense, naturally-rising dough and high-quality ingredients, pizza alla pala is authentic Roman-style pizza by the slice. In other words? It's the slice you've been waiting for!

Created by our Global Head of Bakery, Fulvio Marino, our pizza alla pala dough is made of a perfect combination of three different flours: type 00 flour, buratto flour, and whole wheat. Each flour is 100% Italian and organic, harvested and stone-ground at Mulino Marino, Fulvio’s family-owned mill in Piemonte.

After a long, natural rising period, our pizzaioli stretch the dough out lengthwise. Unlike its wood-fired Neapolitan cousin, pizza alla pala is baked in an electric oven and then slipped onto a wooden pala, or "paddle," topped with fresh ingredients as desired, and served. The result? A pizza that boasts a thick crust with a crispy exterior and a soft, airy interior.

While the beloved classics will always be available (think: Margherita and Cappriciosa), our pizza alla pala menu is constantly changing to reflect the freshest seasonal ingredients available and the culinary genius of our pizzaioli.

DINNER BY THE PALA PIZZA GASTRONOMICA

Specialty pizze, made-to-order and served on a pala; available after 5 p.m.

Carefully crafted from the creative inspiration of our pizzaioli chefs, our pizza gastronomica is, well, as work of art! Each pizza is made with seasonal, high-quality ingredients including a specialty, complementary dough (classic, enkir, or whole wheat). The whole pizza is then baked in an electric oven, served on a wooden paddle, and sliced so that each bite releases a perfectly balanced flavor. Try it whole or by the slice!

Italian regional wines available by the glass or bottle

To complete your pizza experience, pair it with a glass or bottle of Italian vino. Choose from among 70 different options by the bottle and a vast range of wines by the glass. Can’t decide? Step up to counter and one of our wine leads will be happy to suggest a pairing for your pizza and personal taste.
