A rare Italian salumi prized across Italy, Culatello di Zibello DOP is produced exclusively in the province of Parma near the foggy Po River Valley. What makes it the King of all Salumi? For starters, it's made entirely by hand, from start to finish. High-quality pork legs are deboned, then seasoned with salt, pepper, garlic and sometimes white wine, then wrapped in a natural casing held together by twine. After that it's hung to dry and slowly age in cold, humid cellars, giving it a distinctive complex taste, sweet flavor, and funky edge.
