Parmigiano Reggiano is one of the most ancient cheeses ever known. To honor this great formaggio, we're declaring Parmigiano Reggiano DOP Day on Friday, March 15 featuring special tastings, plus 30% off our finest Parmigiano Reggiano.*

WHAT IS PARMIGIANO REGGIANO? 

Parmigiano Reggiano DOP, the “King of Cheeses,” can only be produced in certified areas around Emilia-Romagna, from the plains to the mountains between the scenic rivers Po and Reno. Small-scale dairy farms in these zones produce milk of exceptional quality from cows fed a wholesome diet of local grass. To create each wheel, cheesemongers age 160 gallons of milk for a minimum of 12 months before testing and certification. The result? A cheese that boasts a symphony of complex flavors and textures, from a salty, crystalline mouthfeel to delicate notes of grass and sweet cream butter.

We want you to taste this cheese that's so rich in history. So for one day only, we're taking 30% off two special varieties of Parmigiano Reggiano carefully aged by Cravero: 24-month Parmigiano Reggiano and Parmigiano Reggiano di Montagne.

A fifth-generation affineur located in Bra, Cravero has been meticulously sourcing and maturing Parmigiano Reggiano in their twenty-foot high aging rooms for more than 160 years. Their 24-month Parmigiano Reggiano is sourced from a small group of cheese producers in Emilia-Romagna. Here, Red Reggiana cows feed on local alfalfa grasses, giving the milk – and the cheese – a unique herbaceous flavor.

And then there's Cravero's Parmigiano Reggiano di Montagne, or "mountain" Parmigiano. Cravero selects wheels from a small group of producers in the Apennine mountains where the cows graze on hillside grasses. This distinct diet, as well as the moisture levels in higher-altitudes, combined with Cravero's aging techniques, creates a creamier and sweeter cheese than most.

At 1:30 p.m., join us for the most exciting moment of the day: the wheel opening! Opening a wheel of Parmigiano Reggiano DOP, which weighs roughly 100 pounds, requires experience and meticulous attention in order to maintain the internal structure of the cheese. In other words? It's a show you don't want to miss!

The wheel opening will take place at the entrance of the store, followed by complimentary tastings. No need to register in advance, simply stop by to watch the show!
