Mozzarella Monday: Stretch Stracciatella at Foodiversità

Eataly’s fresh curd is made every day with whole milk from local dairies. Our resident mozzarella makers (1 of our 10 iconic products at Eataly), start their days at 7 a.m. to begin production for our restaurants and market.

Stracciatella derives the Italian word straccia meaning rag or shred, a perfect name for this cheese as it is created utilizing a shredding technique. It is made by our mozzarella makers as it is from the same local curd as our mozzarella.

Discover the handmade process of stracciatella at our complimentary class and tasting at Foodiversità, our free food "university"  on January 23 at 1, 3 and 6 p.m. with our Education Manager Ryan Gormley as he guides you step-by-step.

Foodiversità is located in the scenic northwest corner of the market, overlooking 1 World Trade Center. No registration is necessary; seating is first come, first served.
