EXECUTIVE CHEF ALEX PILAS

Alex Pilas has been the executive chef of Eataly USA since we opened our flagship Flatiron location in 2010. Working with each store's chefs, he oversees all restaurants and counters and develops new recipes and menus for all existing and future locations.

HEAD PASTRY CHEF KATIA DELOGU

Katia Delogu is the head pastry chef for Eataly USA. Based in New York City, she oversees operations for all stores and creates new recipes for the sweeter side of our counters and restaurants. She entered the Eataly world in 2009, when she started training with Eataly World Head Pastry Chef Luca Montersino in Torino to open Flatiron.

CHEF RICCARDO ORFINO OF OSTERIA DELLA PACE

Chef Riccardo Orfino is the Executive Chef of Osteria della Pace, our upscale southern Italian dining room that opened August 11. He comes to us from Milano, where he was heading up the acclaimed LadyBù after working in some of the finest kitchens in the world. For the past year, Chef Riccardo has been training under Flatiron Executive Chef Fitz Tallon, learning the difference between the European and American restaurant worlds.
