Italia del Gusto: A History of Caesar Salad at Foodiversità

The origins of Caesar salad hail from Tijuana, Mexico by Italian chef Caesar Cardini. Many believe that the only way to create the condiment is by hand, table side, while others debate whether or not it is a true Caesar salad without the anchovies. The chef’s daughter Rosa Cardini recalls that her father invented the dish making due with what he had for his restaurant over a Fourth of July weekend.
