Aceto Balsamico Tradizionale, or Traditional Balsamic Vinegar, is considered the ultimate Italian vinegar. The best of the best, each bottle is subject to strict production guidelines which are regulated by the Consorzio di Aceto Balsamico Tradizionale. Traditional Balsamic Vinegar is produced only in Reggio Emilia and Modena, two provinces of Italy's central Emilia-Romagna region. The grape must is derived from whole pressed Lambrusco or Trebbiano grapes and aged in wooden barrels for 12 to 25 years. Dense and viscous, each glossy drop boasts deep and complex flavors, so much so that a little bit goes a long way!
