THE PASTA

While your experience is quick and simple, we make our pasta slowly and carefully. All the pasta you see being cooked, tossed, and served at La Pasta Fresca was made daily right here in our very own marketplace. Head over to the fresh pasta counter to watch our expert pastai handcraft shapes like tagliatelle and ravioli, all inspired by the various regions of Italy.

La Pasta Fresca Ingredients

THE INGREDIENTS

In order to achieve the rich flavors and golden color in the fresh pasta, we use only naturally fertilized eggs with a bright red yolk from local farms, and grano duro semolina flour produced by Molino Grassi, an Italian mill in Emilia-Romagna.

What about the sauce, or sugo, for your pasta? Using only the highest quality ingredients, our chefs have thoughtfully paired seasonal sauces with traditional, fresh pasta shapes. Try classics like the Tagliatelle alla Bolognese, long egg pasta ribbons with a classic meat ragù sauce typical of Bologna, or lesser-known dishes like the Trenette al Pesto, long and narrow pasta with the famous basil sauce from Liguria.
