WHAT IS PARMIGIANO REGGIANO? 

Parmigiano Reggiano DOP, the “King of Cheeses,” can only be produced in certified areas around Emilia-Romagna, from the plains to the mountains between the scenic rivers Po and Reno. Small-scale dairy farms in these zones produce milk of exceptional quality from cows fed a wholesome diet of local grass. To create each wheel, cheesemongers age 160 gallons of milk for a minimum of 12 months before testing and certification. The result? A cheese that boasts a symphony of complex flavors and textures, from a salty, crystalline mouthfeel to delicate notes of grass and sweet cream butter.

We want you to taste this cheese that's so rich in history. On Saturday, March 9 and 16, we're taking 30% off two special varieties of Parmigiano Reggiano carefully aged by Cravero: 24-month Parmigiano Reggiano and Parmigiano Reggiano di Montagne.

A fifth-generation affineur located in Bra, Cravero has been meticulously sourcing and maturing Parmigiano Reggiano in their twenty-foot high aging rooms for more than 160 years. Their 24-month Parmigiano Reggiano is sourced from a small group of cheese producers in Emilia-Romagna. Here, Red Reggiana cows feed on local alfalfa grasses, giving the milk – and the cheese – a unique herbaceous flavor.

And then there's Cravero's Parmigiano Reggiano di Montagne, or "mountain" Parmigiano. Cravero selects wheels from a small group of producers in the Apennine mountains where the cows graze on hillside grasses. This distinct diet, as well as the moisture levels in higher-altitudes, combined with Cravero's aging techniques, creates a creamier and sweeter cheese than most.
