At Eataly L.A., we are dedicated to being local. And what's more local than our salad bar, where the freshest seasonal ingredients from nearby Californian farmers are transformed into innovative and healthy plates by one of the best local chefs.

Now, you can get to know Jason Neroni, the chef and owner of L.A.'s renowned Rose Café and the current curator of our own menu at L'Orto dello Chef. Our salad bar, which aptly translates to “the chef’s garden,” reinvents itself each season in collaboration with local chefs and restaurants. As the first guest, Chef Jason has set the bar high with an array of satisfying salads, grain bowls, seasonal soups, and fresh juice.

When he's not checking in on L'Orto dello Chef, Chef Jason is at Rose Café, an iconic restaurant in the heart of Venice, serving locals and travelers alike since 1979. Now, 36 years later, Chef Jason has kept the roots of the Rose that the community knows and loves, while introducing his seasonal, globally influenced cuisine.

He has been in the food world since working at Disney’s Club 33 at age 16, as shared by Star Chefs. Working as a teenage cook, Chef Jason not only realized he belonged in the kitchen but also forged a path through some of the highest caliber kitchens in the world. His first post-Disney stop was Chez Panisse, where he worked the line for a year and began a career-long reverence for responsibly sourced ingredients. Next came a brief pit-stop to help open Spago in Beverly Hills before heading east to earn his New York credentials in the kitchens of Le Cirque, Blue Hill, The Essex House, The Tasting Room, and 71 Clinton Fresh foods, where Chef Jason was head chef at just 27.

Chef Jason was invited to serve as a culinary ambassador to Spain, cooking among some of the world’s most influential chefs at Arzak, Mugaritz, and El Bulli. And it may also be no surprise that his first restaurant, New York’s 10 Downing Food & Wine, garnered much immediate praise, including his 2009 StarChefs Rising Stars Award. The birth of his son had Chef Jason looking homeward to California, where he launched a variety of projects as culinary director for American Gonzo restaurant group — Superba Snack Bar in Venice, East Borough, and Superba Food & Bread — before taking the helm of Rose Café.

There, Chef Jason's menu focuses on local southern California cuisine with an international influence from his world travels. The bakery celebrates American classics, as well as some of the original Rose bakery favorites re-conceptualized with their innovative techniques.
