Every day, our bakers create the unique pizza alla pala, a favorite street food from Roma. This satisfying pizza is named after the wooden “pala,” or paddle, on which it is served. Ready to enjoy on the go, Roman-style, the traditional flatbread is topped with a variety of cured meats, cheeses, and fresh seasonal produce sourced from local farms.

In accordance with the latest directions and protocols from the CDC and the government, Pizza alla Pala is currently closed until further notice. Our Market remained open for business for your daily grocery needs. 

WHAT IS PIZZA ALLA PALA?

Made with a high-hydration, long-rising dough and high-quality ingredients, pizza alla pala is authentic Roman-style pizza by the slice. In other words? It's the slice you've been waiting for!

Created by our Global Head of Bakery, Fulvio Marino, our pizza alla pala dough is made of a perfect combination of three different flours: type 00 flour, buratto flour, and whole wheat. Each flour is 100% Italian and organic, harvested and stone-ground at Mulino Marino, Fulvio’s family-owned mill in Piemonte.

After a long, natural rising period, our pizzaioli stretch the dough out lengthwise. Unlike its wood-fired Neapolitan cousin, pizza alla pala is baked in an electric oven and then slipped onto a wooden pala, or "paddle," topped with fresh ingredients as desired, and served. The result? A pizza that boasts a thick crust with a crispy exterior and a soft, airy interior.

While the beloved classics will always be available (think: Margherita and Cappriciosa), our pizza alla pala menu is constantly changing to reflect the freshest seasonal ingredients available and the culinary genius of our pizzaioli.
