Since our humble beginnings in Torino, Eataly has always been all about bringing people together with high-quality food. In Los Angeles and across the U.S., we keep this alive by working closely with local and Italian producers who share our passion and dedication for food that is good, clean, and fair.

After one year in Los Angeles, we've learned that you (just like us) love pizza and pasta! Throughout 2019, we’ll be hosting renowned L.A. chefs at La Pizza & La Pasta during the Guest Chef Series. While pizza and pasta are just the tip of the Italian culinary iceberg, there is a reason these two staples are the most beloved exports from Italy. Our Guest Chef Series celebrates just that.

Each guest chef will be tasked to conceptualize a pizza or pasta dish that reflects their culinary identity and highlights the producers we work with here at Eataly L.A. Their dish will be offered on the La Pizza & La Pasta menu, as a special, for one night only. Guests will have the chance to watch the chef in action and interact with him or her, as they prepare their special in the restaurant.

The next Guest Chef Series at La Pizza & La Pasta will take place on Thursday, February 28, during dinner service with renowned chef Fernando Darin, the executive chef at Ray’s & Stark Bar at the Los Angeles County Museum of Art (LACMA). In Italy, cooking is not just an act of need, but also a form of art, expression of creativity, and appreciation for the ingredients. Because of that, we’re honored to welcome chef Darin at Eataly L.A., as he shares our passion for the ever-changing world of pizza and commitment to sustainable cooking practices. Taste some of chef Fernando's signature pizzas, like the Aglio e Olio and a seafood inspired pizza with Santa Barbara sea urchin, blue prawns and burrata.

This series will take place for all of 2019 and to keep you on the edge of your seat, we will announce each hand-selected guest chef monthly. Make your reservations before tables book up!

MEET THE CHEF

As the executive chef the Los Angeles County Museum of Art (LACMA) and the Chef owner of Comadre Pizzeria in Balneário Camboriu (Brazil), Fernando Darin appreciates his surroundings amidst some of the most celebrated artwork in the world. “I am very connected to art in all forms, and it is a big influence in my work,” says Darin.

A nod to his early exposure to many cultures and culinary traditions, Darin’s cooking has a distinct international flair. He explains, “I was born to an Italian family in the countryside of Brazil, a region with a lot of Portuguese and Italian influences. It was there that I learned to cook from my grandmother.” As a result, Darin’s cooking style focuses on modern California cuisine with global influences, using organic, ethically sourced ingredients from local farms whenever possible. As a passionate advocate for animal and environmental welfare, Darin has implemented increased menu transparency, food waste reduction initiatives, and a compost program to reduce the carbon footprint of the LACMA campus.

A musician since the age of seven, Darin’s cooking style celebrates the likeness between food and music. “Food has smells and tastes in the same way that music has tones and colors. I definitely bring this inspiration into my kitchen.”

Outside of the restaurant, Darin continues to showcase his passion for food, art, and culture. From 2012 to 2016, he represented Brazil at the Breeder’s Cup “A Taste of the World” and he’s no stranger to Eataly, either! In 2017, Fernando Darin was a headlining chef in the eighth U.S. edition of Identitá Golose—an acclaimed international chefs’ forum—at Eataly Chicago, where he led a master class on new pizza making techniques and created an amazing Pizza di Mare with eccentric toppings, like sea urchins from Santa Barbara, clams, parsley and garlic sauce, bottarga, burrata, and Fresno chilies. Most recently, Darin competed on Food Network’s season 13 of Iron Chef America facing Geoffrey Zakarian.
