Since our humble beginnings in Torino, Eataly has always been all about bringing people together with high-quality food. In Los Angeles and across the U.S., we keep this alive by working closely with local and Italian producers who share our passion and dedication for food that is good, clean, and fair.

After one year in Los Angeles, we've learned that you (just like us) love pizza and pasta! Throughout 2019, we’ll be hosting renowned L.A. chefs at La Pizza & La Pasta during the Guest Chef Series. While pizza and pasta are just the tip of the Italian culinary iceberg, there is a reason these two staples are the most beloved exports from Italy. Our Guest Chef Series celebrates just that.

Each guest chef will be tasked to conceptualize a pizza or pasta dish that reflects their culinary identity and highlights the producers we work with here at Eataly L.A. Their dish will be offered on the La Pizza & La Pasta menu, as a special, for one night only. Guests will have the chance to watch the chef in action and interact with him or her, as they prepare their special in the restaurant.

The next Guest Chef Series at La Pizza & La Pasta will take place on Thursday, April 18, during dinner service with Michele Rubini, the head “pizzaiolo” of the legendary Antica Pizzeria Da Michele, one of the most renowned Neapolitan pizzerie in the world. We are extremely proud to welcome chef Michele and L’Antica Pizzeria at Eataly L.A., because they embrace true Italian tradition with a commitment to quality and fresh ingredients.

From 6-9 p.m., following the tradition of the authentic Pizzeria Da Michele in Napoli, guest will have the chance to enjoy two of the most representative Neapolitan pizzas:

Margherita (Tomato Sauce, Fior di Latte Mozzarella, Olive Oil, Pecorino Romano DOP, Basil)

Marinara (Tomato Sauce, Oregano, Garlic, Olive Oil)

This series will take place for all of 2019 and to keep you on the edge of your seat, we will announce each hand-selected guest chef monthly. Make your reservations before tables book up!

Our work with the local community doesn’t stop with food. Los Angeles has become our home and we’re striving to be an active part of this amazing community. With this thought in mind we decided to devote a portion of the proceeds to the LAFD Foundation, which is constantly involved with and supports the LAFD in protecting life, property, and the environment by providing essential equipment, training, and public outreach programs to supplement city resources.

MEET THE CHEF

Head Pizzaiolo Michele Rubini brings a lifetime of passion for Italian cuisine, genuine hospitality, and detailed technique to his role at L’Antica Pizzeria da Michele.

Rubini’s deft hand for simple, authentic cuisine translates into L’Antica Pizzeria’s menus through delicate pizzas. While presenting guests with exquisite dishes, he purposes his food as a social vehicle—an experience of human connection. “When I think of pizza, I think of all the conversations, laughter, and emotional exchanges among people, friends, lovers, and business partners that are behind each-and-every single bite,” he explains. “I’ve never been more inspired. Observing people enjoying my cuisine and feeling pure happiness, it reminds me why I pursued this industry.”

Raised in Ischia, a small island in the Gulf of Naples, Rubini grew up with parents who cultivated his artistic flair, sending him to pursue education at art schools in Rome and Naples. He explored his creative talent by helming his own graphic design agency as art director, though he still found himself drawn to a love for traditional cuisine and authentic Italian pizza.

In 2015, Rubini moved to the United States to evolve his passion for pizza and joined pizzerias across Southern California from woodfired eateries to a high-end Italian restaurant. “I was obsessed with studying and discovering every single secret about pizza. What seemed so simple was instead something that left space for creativity and experimenting,” he states. His life’s work pinnacled when he met owner Francesco Zimone—sharing a vision of L’Antica Pizzeria’s potential, Rubini seized the role as head pizzaiolo, enriching the new Hollywood location of the legendary pizzeria with taste, beauty, and hospitality.

Outside the kitchen, Rubini continues his imaginative endeavors with a fondness for motorcycles and bicycles—which he also designs and builds—hoping to launch his own brand someday.
