Learn about our cuts at Eataly's butcher counter, and talk to our experts about the best way to prepare them: from time on the grill, to how long it should rest. We source our meat from clean, sustainable farms and ranches like Mindful Meats, where the animals graze daily in open pastures and are humanely handled. Check out our vintage beef cuts from Mindful Meatsfrom NY Strip to Ribeye, and more. Vintage beef boasts intra-muscular marbling due to the mature age of their cows and a much more intense flavor than its younger counterparts: it is only slightly sweet, with intense earthiness and minerality on the palate (owing to a grass-fed diet). The fat takes on a yellow pigmentation with age, adding to the depth of flavor.

BISTECCA ALLA FIORENTINA

Nearly every Tuscan home cook is an expert at bistecca fiorentinaa traditional Florentine steak recipe that calls for only five ingredients. The steak is typically from Chianina cattle — an ancient Tuscan breed known for its prized and tasty meat — seasoned with local spices and grilled over red-hot coals. It’s traditionally served “rare,” but we won’t judge if you ask for medium. (Not too much, anyway).

Grilling peppers only makes them sweeter, creating a beautiful nice charred skin that peels off to reveal a soft interior. What's more, is that you can grill just about any pepper, giving us a multitude of pepper possibilities.
