Every day, our L.A.-based partner Di Stefano makes fresh mozzarella and burrata by hand right in front of you, transforming local curd into fresh, flavorful pasta filata cheese. Watch the age-old process happen right in front of you, enjoy the same fresh cheese in our restaurants, and then take some home with you!

In light of current directions from the CDC and the government surrounding COVID-19 (Coronavirus), we have decided to stop in-house production of mozzarella until further notice. You can still shop fresh mozzarella and other Italian cheese at our Salumi & Formaggi counter. 

Di Stefano Cheese is a family-owned company in southern California with a lifetime of experience and passion for making cheese. Cheesemaker Mimmo Bruno was born in Puglia, where he learned the tradition of mozzarella making and now brought it to the U.S. The company was also the first one to recreate burrata cheese in the U.S., starting a culture of passion for this fresh creamy cheese and its Italian origins.

Today the tradition is kept alive at the Di Stefano Cheese plant in Pomona, California.  Their boutique-style artisanal cheese plant is dedicated to making mozzarella, burrata, and other fresh Italian-style cheeses. We chose Di Stefano for our mozzarella to give you the opportunity to taste freshly made cheese every day, bringing home an authentic piece of Italian tradition.
