PALA DOUGH

Our classic pala dough is made with stone-milled, 100% organic Mulino Marino flour from Piemonte. The ratio of our unique blend has been carefully crafted by Eataly’s Global Head Baker, Fulvio Marino, and represents the whole seed of the wheat plant.

PALA STYLE

Unlike the wood-fired Neapolitan variety, the pizza alla pala is baked in an electric oven heated to 580°F from 10 to 12 minutes. After baking, the pizza is slipped from the oven onto its namesake paddle, topped with fresh ingredients as desired, and served whole. The resulting pizza boasts a thick crust with a crispy exterior that yields to a soft, fluffy interior with each perfect bite.

To enjoy the classic Roman way, pair with a glass or bottle of Italian wine or beer!
