At La Panetteria, you'll find the hearth and heart of Eataly. Watch as our bakers mix organic, stone-ground flour sourced from Mulino Marino in Piemonte with our natural mother yeast before hand-shaping all of our housemade loaves and Roman-style bakery pizza. Pick up a loaf of freshly baked bread, enjoy a slice of pizza alla pala or an artisanal panino, or treat yourself to something sweet from our pastry counter.

Made with a high-hydration, long-rising dough and high-quality ingredients, pizza alla pala is authentic Roman-style pizza by the slice. Every day, our bakers create this special dough with combination of three different flours: type 00 flour, buratto flour, and whole wheat. Each flour is 100% Italian and organic, harvested and stone-ground at Mulino Marino.

This satisfying pizza is named after the wooden “pala,” or paddle, on which it is served. Ready to enjoy on the go, Roman-style, the traditional flatbread is topped with a variety of cured meats, cheeses, and fresh seasonal produce sourced from local farms.  The result? A pizza that boasts a thick crust with a crispy exterior and a soft, airy interior.

The counter also offers a selection of traditional hot and cold Italian panini. Each is prepared with high-quality local and Italian meats, cheeses, and seasonal vegetables, all sandwiched in a housemade baguettesciabattafocaccia, and more. All ingredients are sourced directly from our own store, including the loaves shaped and baked by hand in our bakery, the meats and cheeses from the salumi and formaggi counter, and the seasonal vegetables from our produce department.

Eataly USA Head Pastry Chef Katia Delogu was trained in Torino, the home of Eataly’s pastry program. Every day, she and her team create typical Italian pastries, cakes, and cannoli that are as beautiful as they are delicious. In keeping with Italian tradition, Chef Katia pays particular attention to quality, using the finest Italian and American ingredients. Discover traditional sweet delights like classic Italian torte (cakes), pasticcini (bite size pastries), and our Tiramisù della Nonna, made from scratch every day.

At the heart of La Panetteria is the bakery itself: every day, Eataly's bakers produce freshly-baked bread with our wood-burning oven, mother yeast from Italy, and freshly milled flour. Our lievito madre, or mother yeast, is the key to transforming flour and water into traditional Italian bread. The yeast makes the bread rise and adds a unique flavor that is specific to the climate, water, flour, and history behind each mother. Our time-honored yeast gives each loaf a rustic sourness; it is tested daily by our head baker to determine how to yield the best bread possible. Pick up a loaf of freshly baked bread, from our famous Rustico loaf to the classic ciabatta or tasty focaccia genovese.
