
At Eataly, we source our meat from clean, sustainable farms and ranches where the animals graze daily in open pastures and are humanely handled.
We believe that the health of both the animals and the land on which they are raised has a direct impact on the quality and flavor of the meat once it reaches your table and your mouth. We are proud to say that all of the meat we offer is processed with the following “never ever” guidelines: no antibiotics ever, no added hormones ever, no growth promoting drugs ever!

All of our beef, pork, and game are cut to order and butchered traditionally in-house, and sourced from trusted ranches and local, independent farms from Texas and the Southeast.
SNAKE RIVER FARMS
A prized cross between the famed Japanese Wagyu and American Angus, Snake River Farms’ American Wagyu are raised along the high plain of the Snake River in Eastern Idaho, a herd that's one of the most highly regarded groups of American Wagyu cattle in the world. Snake River Farms has adopted many aspects of the heritage-steeped Japanese feeding method, which takes up to four times longer than traditional U.S. cattle production methods, and their closed-loop production system supports the ranching lifestyle of their family-owned local farms. The result is stunningly beautiful beef that’s extremely tender, intensely flavorful and a one-of-a-kind dining experience.
CREEKSTONE FARMS
For more than a decade, Creekstone Farms has worked with American farms that humanely raise USDA-certified Black Angus cattle, which are born and bred entirely in the U.S. Cattle are free to graze on lush pastures, then finished with high-quality feed. The Black Angus breed is especially known as the gold standard for premium beef, consistently tender and delicious.
HUDSON MEAT MARKET

Located in the capital of Texas, Hudson was established in 1969. Hudson Meat Market produces a variety of smoked sausages and high-quality meat snacks, as well as offering processing services to the Texas wild game hunters, combining state-of-the-art USDA meat processing facilities with the art of traditional German butchering.
COBB CREEK FARM
Hillsboro, Texas
Cobb Creek Farm is one of the largest pastured poultry producers in the country. Their Cornish Cross broiler chickens are raised the old-fashioned way: on fresh green pasture and wholesome, non-GMO feed, and without the use of any antibiotics, steroids, or growth-promoting drugs.
DRY AGING PROGRAM
Ask our butchers about our dry aging options, and they'll be happy to dry age a custom cut for you! At our counter, you will find dry-aged American Wagyu, prime beef, grass-fed beef, and special cuts.
During the dry aging process, the meat is aged for a minimum of 28 days, during which the enzymes present in the meat begin to break down connective tissues and fibers. The beef will lose up to 30% of its original weight, resulting in a tender cut with concentrated flavor.
