All month long, our chef of La Scuola, Jeremy Williams, is taking you on a culinary journey through the city of Venezia (in English, Venice!). Built on over 100 small islands located in the Adriatic Sea, Venezia is a unique city featuring canals and small walkways instead of roads. The food and culture of the city reflect its locale and are heavy on seafood, wine, and cicchetti (traditional small bites).

Flash Demo: Zuppa Covato | Tuesday, February 7, 6-7 p.m.
Zuppa covata (or sopa coada in the Venetian dialect) is a typical dish of Treviso in the Veneto region. Similar to a savory bread pudding, it is made with either squab, Cornish hen, or chicken hidden underneath layers of broth-soaked bread. Chef Jeremy will explain the origins of the dish as you watch the preparation from start to finish. To complete this dish, one of our beverage experts will be pairing zuppa covata with one of our house-brewed beers!
Cucina Regionale: Focus on Veneto | Sunday, February 12, 4-6:30 p.m.
Our newest class series, Cucina Regionale, will take you on a journey of regional Italian cuisine — Sunday supper style! Spend your Sunday evening enjoying all of the flavors of a traditional, Italian supper as if you were in the iconic city of Venezia. Sorry, gondola rides not included!
Flash Demo: Focus on Venetian Cookies and Grappa | Wednesday, February 15, 6-7 p.m.
Venetian-style cookies are rich, earthy, buttery, and rustic. In this flash demo class, we will explore two types of beloved Venetian cookies: zaleti (cornmeal cookie with grappa-soaked raisins and toasted pine nuts) and bussole buranello (an Old-World butter cookie that has deep roots tracing back to the small island of Burano, famous for its lacework and blown glass). Pair both treats with a taste of grappa, a traditional Italian liqueur made from grapes.
Guided Wine Tasting: Venetian Vini | Saturday, February 25, 3:30-4:30 p.m.
In this guided tasting, our expert beverage manager will highlight some of the most delicious wines from the region famous for gondolas, Carnevale, and of course, lots of wine! Guests will taste three different wines from the region paired complementary antipasti.
