October through December is the peak season of the revered white truffle. Prized across the world and incredibly rare, the aromatic tubers are hunted in the wild forests of northern and central Italy only a few months out of the year where they typically grow among oak, hazel, poplar, and beech trees. And the taste? The prized ingredient boasts earthy aromas and notes of shallot, leaving a truly unforgettable flavor to savor.

Our beloved truffle restaurant returns! Every year, we open Il Tartufo, our seasonal restaurant dedicated to experiencing white and black Italian truffles like never before. In an all-new designed space, you'll be transported to the woods of northern Italy (where truffles are foraged!) for a classic Piemontese meal with a modern twist. Enjoy truffles in their purest form while you sip bold reds hand-selected from the restaurant's private enoteca.

Join us for a 45-minute demonstration on how to prepare a classic Italian dish from start to finish! In this class, you’ll learn all the necessary techniques, from selecting ingredients to prepping, chopping, simmering and sautéing.

In this demo, you’ll gather round the stove as the Chef of La Scuola makes Spaghetti Cacio e Pepe al Tartufo, a typical pasta from the region of Lazio with shaved fresh truffle. After the demonstration, you will enjoy the finished dish paired with a wine chosen by our beverage experts!
