Meet Il Risotto, a bar devoted to the rich, creamy dish designed for cold weather. In addition to shared plates and glasses upon glasses of wine, you can now enjoy plates of stirred-to-order risotto in the heart of Eataly Chicago.

The menu features only the best ingredients from Italy and the U.S. (think: Parmigiano Reggiano Vacche Rosse, fresh local produce, and high-quality rice). Executive Chef Rob Wing has created seasonal specialties like Zucca e Robiola (creamy risotto made with seasonal squash from rotating local farms in Illinois and freshly-whipped robiola to finish) and classic Italian favorites like Parmigiano Reggiano (creamy risotto made with Parmigiano Reggiano Vacche Rosse).

At Il Risotto, our chefs choose to cook with Italian carnaroli rice made by Riso Scotti, a family-owned company founded in 1860 by Pietro Scotti. Since then, his children, grandchildren, and great grandchildren have continued producing the highest quality rice in Italy under the name Fratelli Scotti, or "Scotti brothers." Following ancient tradition with respect to the fields and using innovative technology, they grow and process their rice just north of the Po River in the northern Italian region of Lombardia, where the tradition of risotto first began during the Renaissance.

While you watch our chefs slowly stir your rice to prime creaminess, sip a perfect pairing of Italian wine for the ultimate risotto experience.
