At Eataly, we source our meat from clean, sustainable farms and ranches where the animals graze daily in open pastures and are humanely handled.

We believe that the health of both the animals and the land on which they are raised has a direct impact on the quality and flavor of the meat once it reaches your table and your mouth. We are proud to say that all of the meat we offer is processed with the following “never ever” guidelines: No antibiotics ever! No added hormones ever!  No growth promoting drugs ever!


Pat LaFrieda, a third generation butcher from a New York family dedicated to sourcing the highest quality meats throughout the United States, and Sergio Capaldo, the head meat advisor to Eataly worldwide and the founder of the Razza Piemontese Consortium and La Granda Farms in Piemonte, Italy, put their heads together at Eataly to create some of the first butcher counters in the United States to offer a full line of both Angus Prime Beef and Piemontese Beef.


The Piemontese breed of cattle, known in Italian as “Razza Piemontese,” is considered among the best in the world. While the cattle’s origins lie in the foothills of Italy, Toro Ranch in Broken Bow, Nebraska, has been raising this iconic Italian breed for many years now. In addition to its unparalleled tenderness and taste, Piemontese beef is beloved by Italy, America, and Eataly for being lower in fat, cholesterol, and calories than conventional beef.


Eataly brings you exceptionally high quality 100% USDA Prime Black Angus Beef from Donley Ranch in Kansas (only 3% of all beef in the USA receives the "Prime" grade). Pasture-raised and grain-finished, resulting in the perfect taste and buttery fat content, our Black Angus cattle graze on lush pastures and are raised with no antibiotics, no added hormones, and no artificial ingredients.


Heritage Breed is the original breed, what our ancestors were eating before crossbreeding. The Bensmiller family operates a full-time family farm in the heart of Americas Corn Belt. Their entire family is committed to animal welfare and responsible farming methods: responsibility towards the land, towards the American consumer, and towards their animals.


Our veal is the best you can get: all-natural, milk-fed, humanely-raised, and group-housed from Amish and Mennonite farms in Lancaster, Pennsylvania. Our lamb is the Suffolk of England breed and comes from the Marvin Dane Farm in Albion, Michigan. The Suffolk breed has the perfect lamb rack: equally meaty and tender. The lambs are free to graze and are fed a balanced diet consisting primarily of hay, oats, and grass.
