    WHAT IS A5 WAGYU?

    The term Wagyu refers to all Japanese beef cattle. In fact, wa means “Japanese” and gyu means “cow” in Japan. The genetics of Wagyu cattle dates back 3500 years. This prized DNA gives them their signature intramuscular marbling.

    So what's the deal with A5? A5 is the highest level grade that Japanese offer their cattle. The grad or BMS, Beef Marbling Score, which is the inter muscular fat of each cattle that allows them to be graded 1 through 5 - 1 being the least amount of fat and 5 being the most.

    WHY IS A5 WAGYU BEEF SO POPULAR?

    In short: flavor. Thanks to the organogenetic traits of Wagyu cattle, Wagyu beef boasts intense marbling, or a 'snowflake effect', referring to the thin streaks of fat dispersed evenly throughout the meat. This translates to a rich, buttery flavor profile and unique texture unlike any other Wagyu you have likely had before.

    TIPS FOR SHOPPING A5 WAGYU?

    The best thing about A5: you don't need a lot of it! Because of it's intense marbling and flavor, our experts only recommend about 3-4 ounces per person. When in doubt, just ask our butchers behind the counter to guide you.

    HOW DO I HANDLE AND COOK A5 WAGYU?

    When you bring home your A5 Wagyu, make sure to treat it with care! The fat in the meat will start to melt at room temperature so handle in quickly and keep it as chilled as possible. Remember, every bit of fat that you lose is flavor.

    For enjoying your precious cuts, we recommend to thinly slice it and cook it in a hot skillet only on one side for just a few minutes. That small amount of heat will ensure big flavor.
