Produced in the sole province of Cuneo, this cheese ages in natural caves for at least one month and up to five months, dense with no open holes, it has a pretty strong flavor that gets spicier and sharper as it ages.
While if you already knew, then this is still the perfect opportunity to refresh your memory and tickle your palate with a taste of this piece of Italian gastronomic history! Join our cheese mongers on Tuesday, March 21 at 12:30pm at the Salumi e Formaggi counter, they'll be more than happy to offer you a bite and share tips and fun facts on this wonderful cheese.
No need to register for Eataly Tales! The demonstrations and tastings are free and open to all.
