Our butchers source this meat from clean, sustainable farms and ranches where the animals graze daily in open pastures and are humanely handled. On Monday, April 24, join us for a free class at La Scuola, our cooking school. Our butcher will show you how to clean and cut a dry-aged steak while describing the process of dry aging beef, then our chef demonstrate before your eyes how to achieve the perfect seared meat without a grill. Class includes complimentary tastings and runs from 5:30 to 6:30 p.m. No need to register in advance; attendance is first come, first served.

Then, once you pick up prime meat for 30% off, channel your inner Tuscan and grill up Bistecca alla Fiorentina! This traditional Florentine recipe is incredibly simple — and incredibly delicious. Trust us: your lucky friends and family will thank you.
