Wagyu, from wa meaning Japanese, and gyu, meaning cow, refers to all Japanese beef cattle notorious both for its rich intramuscular marbling – made of thin streaks of fat dispersed evenly throughout the meat – and its intense red coloring. American Waygu is the result of crossbreeding purebred Japanese cattle with continental breeds, for cuts with the intense marbling of the Japanese cow and the strong meaty flavor of the American cattle.
This bundle features Gold Grade Cuts, the highest grade of American Wagyu beef with a BMS (Japanese Beef Marbling Score) of 9 to 12, indicating intense and consistent marbling. In comparison, the USDA Prime, the highest grade of local cattle, only reaches a 4 or 5 BMS.
The American Wagyu Gold Porterhouse, is a classic steak featuring a Wagyu Gold NY Strip and a Wagyu Gold Filet Mignon separated with a T-shaped bone. The American Wagyu Gold NY Strip comes from the tender longissimus dorsi muscle located in the short loin primal, and is separated by a T-shaped bone from the American Wagyu Gold Filet Mignon, also known as Tenderloin Steak, which comes from the psoas major, a muscle with little marbling that maintains an extremely tender texture because of its minimal usage.

Pat LaFrieda orders placed before 2 p.m. EST Monday through Wednesday will ship via UPS Standard Overnight on the following day. Orders received after 2 p.m. Wednesday through 8 a.m. Sunday will ship on Monday for Tuesday delivery. Sunday orders received after 8 a.m., will ship out on Tuesday.
