Prosciutto crudo, or cured ham, is one of the most popular salumi in the world. Made with high-quality pork legs, each prosciutto is first cured with salt, and then follows an aging period between 14 and 36 months, in which each leg slowly develops an intense flavor, enriched by the aroma of the surrounding microclimates and methods of seasoning according to traditional family recipes. Once aged, each slice of prosciutto acquires a distinct, sweet yet salty flavor, enhanced by abundant streaks of fat that melts in the mouth.
