Parmigiano Reggiano DOP is produced exclusively in select regions of Emilia-Romagna and Mantova in the hilly and mountainous areas between the Po and Tyrrhenian rivers, with milk from cows that feed exclusively on locally grown forage. Each wheel is made from fresh unpasteurized cow’s milk, rennet, and salt, and is aged for 24 months. Enjoy grated over pasta and risotto, or simply savor on its own with prosciutto crudo or a drizzle of balsamic vinegar from Modena.

Caseificio Gennari started in 1953, when Sergio and Maria take over the Caseificio Villa Paveri in Collecchio. Back then, only three forms of cheese were produced per day. Today, the company has a warehouse of about 35,000 wheels, as well as a modern farm for the production of milk. For about 30 years, Caseificio Gennari has developed the agro-zootechnical sector: a settlement with more than 1000 heads of cattle that guarantees about 60% of the milk is processed in their dairy farm, allowing them to follow the production process from the fields to the finished product, tying their work more and more to the territory.
