Robiola is a specialty of Northern Italy, made from cow's milk and aged for 45 days. The name may come from the town of Robbia, Italy – though some say it may come from the word rubeole (ruddy) for the color of its rind. This pungent washed-rind cheese is quite similar to Taleggio, yet even more intense, with hint of fruit and touch of salt on the finish. This cheese melts well, making it an ideal addition to pizza, risotto, and pasta – or serve simply along side spicy mostarda on an antipasto board, with a bright glass of Verdicchio to pair.
