Ravioli is a delicious specialty that can be found in most regions of Italy. Ravioli gigante is just as it sounds - a much larger version of the original pasta shape. Fresh pasta dough is wrapped around rich local products such as meat, cheese, or vegetables, and then finished simply with tomato sauce, butter, or broth. There are countless varieties of shapes and fillings; each region, province, city, and even family possessing their own special recipes. For October's class, we'll be focusing on fall flavors and filling our homemade raviolis with pumpkin and combining the finished product with a brown butter and sage sauce.
