There is a lot of speculation about where the name porterhouse was derived: some believe the porterhouse steak has its roots in the porter house, a name used for a pub or alehouse that also served food. It has also been argued that the porterhouse steak got its name from the porter, a popular beverage served at these taverns. Another publication takes this idea a step further by asserting that a Manhattan porter house owner named Martin Morrison allegedly served the first porterhouse steak in 1814 with ale. Regardless of where it gets its name, it is truly a grandiose steak, cut from the middle to rear section of the loin, a combination of NY Strip steak and filet mignon separated by the tell-tale T-shaped bone. The presence of the bone of course adds to the flavor and succulence of the cut.
