The Chickpea Strozzapreti or 'priest stranglers', from Pastificio Morelli are an elongated form of cavatelli typical of central and southern Italy, still made today by either hand-rolling or twisting the dough with a wire and then drying them. The Chickpea Strozzapreti is made by using chickpea flour exclusively.
