About this Class: Known for its diverse palate and regional cuisine, Italy’s culinary identity can often be defined by its pasta. Each region in Italy is known for unique and authentic pasta shapes prepared in the tradition of the region. In this class, take a trip to Piemonte, a decadent region at the foot of the Italian Alps, to discover the elegant local flavors. Known for its baroque cities, pastoral landscapes, and rich cuisine, Piemonte boasts some beloved pasta classics such as Agnolotti del Plin and Tajarin paired with fresh white truffles! Join us to learn all about these traditional pasta shapes and how they are made following the traditions of the region.
About Fresh White Truffles: Fresh white truffles are back in season! One of Italy's most prized ingredients, white truffles are in season beginning on September 21st, which means the prized tubers have now arrived at Eataly. Famously foraged in Italy’s Piemonte region, where Eataly was founded, white truffles remind us to slow down and celebrate gifts from nature. Eating them is always a special occasion — particularly because the season is brief and unpredictable. Our only choice is to uncork a bottle of wine and savor them while we can.
