Also known as "the Russian sturgeon," the Ars Italica Oscietra Classic from Calvisius is found originally around the Black Sea, Caspian Sea, and the Azov Sea. Made with 100% Malossol recipe, only 3% salt is added.

Smooth, firm, and consistent in texture, this caviar is persistently rich with a deep flavor of butter and hazelnuts. Occasionally black, the caviar ranges from dark grey to dark brown.

The story of Calvisius begins within the small town of Calvisano, situated between Venezia and Milano. There, you will find Agroittica Lombarda, the most prolific caviar farm in the world, producing 20 tons of caviar per year. This project of farming endangered fish in freshwater began in collaboration with the University of California: Davis and a Pacific species of White sturgeon. Today, the company remains dedicated to combining Italian traditions with respect for nature and passion for perfection. The area's pure spring water supports the farming of the premium roe, which is best for the health of the sturgeon and for the quality of the product. And throughout the entire life cycle of the fish, Calvisius directs each phase, giving us complete traceability of every tin.
