In the hills of Le Langhe in Piemonte, La Monfortina prepares pasta made with eggs according to the local tradition. The pasta dough is made using only fresh eggs, it is then cut by hand and left to dry naturally for 24 hours.


Perhaps Piemonte's most famous pasta, the rich but delicate strands of tajarin express the full flavor of the hills.
