Campania Sandwich with Finocchiona PGI

This ultra-savory sandwich shines with fennel-infused salame from Salumeria Monte San Savino.

Finocchiona PGI is a unique salame that has origins in medieval Tuscany. Instead of expensive black pepper, foods were flavored and preserved with fennel, or finocchio in Italian. Finocchiona PGI is prepared from ground lean and fatty pork belly and mixed with salt, fennel seeds, pepper, and garlic.

1 small baguette

1 medium tomato, sliced

1 tbsp extra virgin olive oil

1 small handful fresh basil, torn

4 oz Mozzarella di Bufala Campana PDO

1/4 cup Giffoni PGI Hazelnuts, chopped

4 oz Finocchiona PGI, thinly sliced

Slice the baguette in half lengthwise. Add the sliced tomato and drizzle with the olive oil. Season with salt and top with the torn basil. Add the mozzarella and chopped hazelnuts. Arrange the Finocchiona PGI on top and enjoy.
