Grana Padano DOP Biscuits with Smoked Salmon and Dill

INGREDIENTS

1 cup type 0 flour

6 tbsp cold butter

1 egg white

1–2 tbsp chopped rosemary

100 g Grana Padano DOP aged over 20 months

3.5 oz smoked salmon

Dill to taste

Sour cream to taste

In the bowl of a stand mixer, combine the flour, butter, egg white, rosemary, and Grana Padano DOP. Mix on medium speed until smooth. Cover with plastic wrap and let the dough rest in the refrigerator for at least 30 minutes.

Once rested, preheat the oven to 350°F and line a baking sheet with parchment paper. Roll out the dough with a rolling pin to 3-4 mm thick. Cut out discs using a 3/4-inch pastry cutter and place on the prepared baking sheet. Bake for 12 minutes, until biscuits are lightly golden.

Let the biscuits cool completely. Top the biscuits with the smoked salmon, a dollop of sour cream, and a sprig of fresh dill. Serve immediately.
