Each Eataly store in the world is dedicated to a theme: a piece of history, an influential person, an idea. Eataly Roma is an homage to beauty, Eataly Smeraldo in Milano to music, Eataly Istanbul to history.

Eataly L.A. is dedicated to water and its preservation. Why? It's simple: water is the essence of life.  Our bodies are made of up to 65% water. Water is in everything we eat. It's crucial to both Italy and our new home in California. Basically: water is the one of main concerns for the future. It's clear that we need water in our lives; it's also clear that there's a problem with our water usage.

So, we are doing everything we can to save water at Eataly L.A. Yep, we're gonna reduce, reuse, and recycle, y'all.

When you enter our newest location, you will spot our in-house greywater system, which is designed to recycle water. The system will reduce the amount of drinkable water we use by up to 33% by collecting all "greywater," or the used water from the hand-washing sinks in our restrooms and the condensation from our refrigeration unit. Hidden pipes transport the greywater to cleaning tanks, visible on our second floor, and then use it to water our plants, flush our toilets, and water our olive tree (yes, we have an olive tree! Get excited).

In addition, we are using top technology across the store to save water. Our kitchen equipment will use 64% less water than a comparable commercial kitchen, saving 5.5 million gallons of water every day; even our toilets save water with low-flow plumbing fixtures, saving an addition 400,000 gallons ever year.
