Mark your greenest calendar: Earth Day is on Monday, April 22!

During this time of year, we think of Eataly founder Oscar Farinetti’s watchword: “Pensa locale, agisci globale,” he reminds us. “Think locally, act globally.”

Oscar has dedicated his life to this concept: to create Eataly, he spent years traveling around each of Italy’s 20 regions to find the small farmers, bakers, and cheesemakers who offered the best representation of the unique local cuisine. Following Slow Food’s philosophy, he looked for food and drink that were good (tastes delicious), clean (produced in a way that is not harmful to the environment, animal welfare, or health), and fair (suitably compensates employees).

More than a decade later, he has shared his local passion with 40 stores around the world, from Italy to Japan to the U.S.

While all showcasing these same sustainable Italian producers, each new Eataly also has its own selection of local producers. Before we open a store, our buyers do the same type of research that Oscar did all those years ago, searching for the area's good, clean, and fair products, from freshly-milled grains for our bread to humanely-raised eggs for our fresh pasta.

These local producers make each Eataly completely unique. Even in the U.S., the milk sourced from small and charming dairies in upstate New York has a different terroir than the milk from the equally small and charming dairies in Illinois. (Because if you can’t talk about milk terroir on Earth Day, when can you?) From mozzarella to gelato, this delicious local twist is felt across our markets, restaurants, and cooking schools.
