Choose salmon and cod from Norway for their pure taste, beautiful color, firm flesh and ideal texture! Try Norwegian salmon in a quick and creamy pasta dish with pesto and cherry tomatoes, or  try a tasty twist on fish tacos (—always a hit!), with pan-fried cod and a spicy sauce.

PASTA WITH NORWEGIAN SALMON AND PESTO (Serves 4)

1.5 lbs. Norwegian salmon fillet, skinned and deboned
1 lb pasta fusilli
1 tbsp butter
1 tbsp olive oil
12 cherry tomatoes
1 cup crème fraîche
6 tbs pesto
Salt & ground black pepper
0.25 cups pine nuts
3 oz Parmesan cheese, grated

• Cut salmon into 1-inch cubes
• Cook pasta as directed on package
• Cut cherry tomatoes in half
• Pan-roast Norwegian Salmon cubes with butter and olive oil, and add tomatoes
• Mix crème fraîche (sour cream may be substituted) and pesto, and fold into pasta. Season with salt and pepper
• Gently toss salmon and cherry tomatoes into pasta just before serving
• Serve with pine nuts, Parmesan and chopped basil sprinkled over


 

TACOS WITH NORWEGIAN COD (Serves 4)

800g Norwegian cod fillet
2 tbsp butter
0.5 lime, juiced
salt and pepper

For the mango salsa: 1 mango; 2 pineapple slices; 1 lime, juiced; 1 mild chilli; cilantro, fresh
For the tomato salsa: 2 tomato; 1 mild chilli; 1 bunch fresh cilantro; 0.5 yellow onions; salt and pepper
Serve with: 250 ml chili mayo; 8 6"-8" soft tortillas
Garnish: 1 red onion, 2 avocados, lettuce

• Shred the romaine lettuce leaves, slice the red onion and avocado into thin wedges or chunks.
• Make the salsas. Finely chop all the ingredients and mix well. Set aside while you prepare the fish.
• Cut the cod into cubes or strips and fry in a pan with a little butter. Add a little lime juice after the cod has finished cooking. Add some salt and pepper.
• Heat the tortillas in the oven, frying pan or microwave.
• Spread the chilli mayonnaise onto the tortillas. Add the sliced chilli, shredded lettuce, avocado, onion, cod, salsa and chopped coriander.
