In these pistachio gelato sandwiches, homemade gelato is spread between Germinal Organic lemon and ginger cookies, resulting in a sweet treat that's light and crunchy on the outside while smooth and velvety on the inside. 

Not too crazy about pistachios? You can substitute them for hazelnuts or almonds. To make this recipe even quicker, skip making the gelato at home and simply pick up your favorite frozen flavor from our gelato counter!

Pistachio Gelato Sandwiches

Yield: 10 gelato sandwiches

2 cups heavy cream
1 (14 oz) can of Organic sweetened condensed milk
1 cup salted pistachios
1/2 teaspoon vanilla extract
1 box of Germinal Organic Ginger & Lemon Cookies

In a stand-up mixer, mix heavy whipping cream on slow and gradually increase speed until stiff peaks form, about 5-7 minutes.

In a food processor, grind 3/4 cup of pistachios.

In a small saucepan on medium-low heat, add pistachios and condensed milk. Heat until slightly boiling, about 2 minutes. Remove from heat and whisk in vanilla extract. Transfer to a bowl and submerge in an ice bath until cool.

Strain cooled pistachio milk and fold in the whipped cream.

Pour into a 2-quart container and cover. Freeze for 6 hours or until firm. Store in freezer until ready to use.

Place one scoop of pistachio ice cream on Germinal Organic Ginger and Lemon Cookie and top off with another cookie, pressing down gently. Roll with chopped pistachio and serve cold.
