This three-color salad is inspired by Italian flag: red radicchio, white endive, and green arugula. Quality is front and center in our simple recipe, so be sure to pick fresh produce paired with high-quality balsamic vinegar and extra virgin olive oil.

Yield: 4 servings

1 bunch arugula
1 head radicchio
1 head endive
1 recipe vinaigrette, freshly made
4 ounces Parmigiano Reggiano or Grana Padano
Fine sea salt, to taste

Tear the arugula and radicchio into bite-size pieces. Chop the endive. Place the salad greens in a large bowl.

Drizzle the vinaigrette over the greens and toss, either by hand or with a large spoon and fork.

Divide the salad among individual serving plates. Use a vegetable peeler to shave the cheese over the top.
