Celebrate summer with a perfect pairing of two of northern Italy’s most typical PDO products, Garda DOC sparkling wines, and Piave DOP cheese. 

Garda DOC is a consortium of vineyards and wine producers situated on the largest lake in Italy, Lago di Garda, a predominantly hilly production area that surrounds the lake, extending from Valtènesi to Valpolicella, from the banks of the Mincio River to Verona. Recently, the area has received the Protected Designation of Origin (DOC) for its deliciously crisp and floral white spumante. 

One hundred miles northeast in the Dolomite mountains, in the province of Belluno (the northernmost tip of the Veneto region) a deliciously nutty, crystalline, and slightly sweet cheese is made: Piave DOP. Made only with Belluno-produced milk, Piave DOP has a full aroma reminiscent of Alpine herbs and flowers. With five different ages, there is a Piave DOP Cheese for every palate: from pleasant and slightly salty notes to intense full-bodied flavors and hints of fruit.

We want to show, not tell, how harmonious this pairing is with this recipe: Paccheri al Piave. This pasta showcases Piave's sweet and nutty flavor by complementing it with the smokiness of Speck Alto Adige IGP, and of course, Bronte pistachios. These nuts are considered the little green gem of Sicily, and due to their cultivation with the volcanic soil of Mount Etna, the rich flavor of pistacchi di Bronte is irreplicable.

Yield: 4 servings

  • 1 diced onion
  • 1L cream
  • 300g Julienne-cut Speck Alto Adige IGP
  • 300g grated Bronte Pistachio nuts
  • 400g Paccheri
  • Piave Vecchio cheese shavings

Soften the onion with a drizzle of extra-virgin olive oil in a saucepan. Add the cubed speck and brown quickly. Add the cream and pistachio nuts, then simmer for at least 20 minutes until the sauce has thickened. Serve after having dressed the plate with generous shavings of Piave Vecchio cheese. Pair with a glass of Garda Spumante DOC to refresh your palate, and experience a match made in Europe.
