La Valletta lies on the Colfiorito plateau in Umbria. On their 100 hectares, they cultivate legumes, grames, and herbs, including lentils, farro, and Umbrian saffron.

The purple flowers that produce saffron are picked by hand every October through November. On the same day they are picked, the stigmas are separated from the flowers and wood roasted. The result is beautifully red saffron threads.

Use these delicate threads to make a traditional Risotto alla Milanese infused with a golden saffron hue.
