The Classic Colomba by Bonifanti is a sweet, dove-shaped loaf made with the highest quality ingredients: mother yeast for fluffiness, fresh eggs for an intense yellow color, sultanina raisins, candied oranges and candied citron for a refreshing touch. Baked especially for Eataly, this Colomba has a generous topping of pearled sugar and crunchy almonds.

Excellent on its own, Colomba pairs well with fresh berries, dark chocolate, and sweet spreads. Enjoy the festive Easter cake with a glass of Prosecco or dessert wine.

On a winter's night in 1932, Vincenzo Bonifanti created his own personal twist on the classic panettone, a traditional Italian Christmas cake. As he worked in his shop in the center of Villafranca, a small town in Piemonte, he was inspired to add a typical local ingredient to the traditional recipe: he topped his cake with crunchy hazelnut frosting, the same twist used by his family today.
